I have been on a total breakfast smoothie kick lately. They’re fast, easy, and if you make them low in carbs and high in protein, they’ll stick with you for a while to help you make it through your morning. I’m always looking for new varieties to try, especially without a ton of green stuff (some folks love that, but maybe it’s not your favorite). I do however have a total obsession with pineapple, and once I found this recipe with almonds as well, I was sold! You do need to have a high quality blender in order to smooth out the whole almonds, or else you may have lots of small pieces of nuts that may feel a little gritty on your tongue. Just drop everything into the blender, whirl away and…breakfast! If you want to amp up the vanilla flavor, a scant quarter teaspoon of pure vanilla extra will do just the trick for an extra hit of vanilla flavor.
Almond-Pineapple Smoothie
Prep time: 5 minutes
Servings: 1
- 1/2 cup (8 ounces) plain or vanilla Greek yogurt
- 2 1/2 ounces fresh pineapple
- 20 whole blanched and slivered almonds
- 1/2 cup vanilla almond milk
Directions

In blender, combine yogurt, pineapple, almonds, and almond milk and puree until smooth and creamy. Enjoy immediately.
Note: Other low-carb fruits or nuts can be substituted for pineapple and/or almonds.
