This week will actually feel like summer, and I’m ready to fire up the grill and make a fast, tasty dinner. I love making sauces and have been looking for options other than commercial bbq sauces to jazz things up a bit. A flavorful sauce is easy to whip up in just a minute or two, and will add unique flavor to your dish. I love grilling chicken and usually use boneless, skinless chicken thighs instead of chicken breasts. They stay juicy longer and cost less too. If the grill makes you nervous, just remember that if the meat or skin sticks to the grates, it’s not ready to be turned. Let it sit for another minute or two, then give it another go. For maximum flavor and juiciness, let your chicken rest 5-10 minutes before cutting or serving. Also, be sure not to brush on your sauce until the last five minutes of cooking. Any sooner and the sugar in the bbq sauce may burn.
