Need a quick afternoon snack for the kiddos or yourself? Of course you do! These tasty lettuce wraps will shake up your after-school snack routine while keeping things healthy and light enough so that you won’t be too stuffed when dinner rolls around. I like to use leftover rotisserie chicken for these, but any leftover cooked chicken, or even packaged pre-cooked chicken strips will do. These can even work as a do-it-yourself lunch! Just package the components separately and assemble right before eating in order to keep your lettuce crisp. Enjoy!
Asian Chicken Lettuce Wraps
Serves: 1
- 1/2 cup cooked chicken breast strips
- 2 large Bibb or Boston lettuce leaves
- 1/2 cup DOLE Jarred Mandarin Oranges, drained
- 2 teaspoons slivered almonds
- 1 tablespoon light Asian salad dressing
Directions

Divide chicken between two lettuce leaves to make two wraps.

Place 1/4 cup mandarin oranges and 1 teaspoon almonds into each wrap.

Serve lettuce wraps with salad dressing for dipping.
