When it comes to football food, I want it to be cheesy and easy to prepare. This dip is both of those things! Kids love ranch dressing, you love spinach, and everyone loves chicken. Mix them all together and you have the perfect game day snack for everyone in your family. To really squeeze your spinach dry, place the thawed spinach into a clean dish towel, fold over to completely cover, then squeeze by twisting the ends in opposite directions. Water will practically pour through the towel! Crackers, carrots, or even slices of baguette make perfect dippers. You can even make this ahead a day or two, then bake just before serving. Yum!
Baked Spinach and Chicken Dip
Prep time: 15 minutes
Cook time: 20 minutes
- 1 package (8 ounces) cream cheese, cubed
- 1 cup Hidden Valley Original Ranch Dressing
- 1 package (10 ounces) frozen, chopped spinach, thawed and squeezed dry
- 1/2 cup Parmesan cheese, grated
- 1/2 cup cooked chicken, chopped
Heat oven to 375 F.
In microwave-safe medium bowl, add cream cheese and dressing. Microwave on high 30 seconds, or until cream cheese is soft. Stir to combine. Add spinach and Parmesan cheese. Mix well. Add chicken and stir to combine.
Transfer mixture to baking dish that holds at least 6 cups. Bake 20 minutes, or until bubbly and golden brown. The internal temperature should be 165 F.
