Easy Family Recipes: Berry Burst Smoothie

Protein Berry Burst SmoothieThis week, I am all about smoothies. After dropping some serious change at the local smoothie bar, I realized that it’s just more fiscally responsible to start making my own more often at home. I’m looking for something with a bit more protein though, to help get the kids and me through the morning without hunger pangs an hour after we drink it. By throwing everything together in the blender the night before, it gives some time for the protein-packed ingredients to soften a bit so that you can feel like you’re drinking your smoothie, rather than chewing it. This recipe easily doubles or triples, based on the size of your blender and will keep you (and the kids) satisfied all morning long.

Protein-Packed Berry Burst Smoothie

Makes: 1 serving (4 ounces milk per serving)

  • 1 packet plain instant oatmeal
  • 1/2 cup fat free or lowfat milk
  • 1/2 cup strawberries, hulled, chopped, or raspberries, whole
  • 1 tablespoon honey
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon walnuts, chopped

Combine first five ingredients in the carafe of a blender. Cover and refrigerate overnight.

In the morning, blend the mixture until smooth. Top with chopped walnuts.

Nutrition: 280 calories; 7 g fat; 0 g saturated fat; 0mg cholesterol; 10 g protein; 50 g carbohydrates; 5 g fiber; 80 mg sodium; 250mg calcium (25% of daily value). Nutrition figures based on using fat free milk.
