Easy Family Recipes: Berry Vinaigrette

Berry VinaigretteI spent the better part of summer cooking camps coaxing kids and teens to eat (and enjoy) the salads we made several times a week. Often, I was created with “Chef Chris, I just don’t eat salad”, or “Chef Chris, I hate dressing. Please don’t give me any salad.” Naked greens and veggies on the plate went untouched, as the more dressing phobic would even go so far as to sometimes skip dessert to avoid the dreaded combo of oil and vinegar. No more!

This super easy berry vinaigrette is sweet and tangy, and can easily be adjusted to use your own family’s favorite berries. Make your salads even yummier by adding few berries with the greens and you’ll have a win-win. Just be sure not to dress your salad until right before serving. Nobody likes soggy greens!


Berry Vinaigrette

Makes about 2 cups
Prep Time: 5 minutes

  • 1/2 cup Heinz® Apple Cider Vinegar
  • 3 tablespoons sugar
  • 1 cup extra virgin olive oil or vegetable oil
  • 2 cups cut berries (raspberries, strawberries or blackberries)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Whisk all ingredients together in a medium bowl, crushing the berries a bit with the whisk to extract some of the fruit juice. Cover and store in refrigerator. Shake well before serving at room temperature. Can be made a day in advance.
