Quick, easy salads are a perfect accompaniment to your spring and summertime weeknight table. You don’t even need to rely on packaged dressing to move things along. By making a quick dressing with mayo, vinegar and yes, even a touch of sugar, you’ll have a tasty dressing the kids will love. They won’t even mind that they’re eating broccoli! Don’t feel like cooking bacon yourself? Just grab a package of the pre-cooked stuff, crumble, and go. If you’d like to make this more of a main dish instead of a side, grab a rotisserie chicken, shred half of it, and throw it into the mix. Voila!
Broccoli Salad with Bacon & Tomatoes
- 1 head broccoli
- 8 slices bacon, cooked and crumbled
- 1/2 cup chopped red onion
- 1/2 cup raisins (optional)
- 8 ounces sharp cheddar cheese, cubed
- 1/2 cup halved cherry tomatoes
- 1 cup mayonnaise
- 2 tablespoons white vinegar
- 2 tablespoons granulated sugar
- Salt, to taste
- Ground black pepper, to taste
Wash broccoli thoroughly. Cut head into small florets, and stem into small bite-sized pieces.
Place broccoli in medium bowl. Add crumbled bacon, onion, raisins, cheese and cherry tomatoes.
In small bowl, combine mayonnaise, vinegar and sugar. Stir until sugar dissolves. Add to broccoli mixture; toss until well coated. Season to taste with salt and pepper.
