Easy Family Recipes: Fried Rice

Fried RiceMy kids gobble fried rice the way I gobble chocolate. They love the stuff! I always forget how darn easy it is to make, and how quick too. Last week I had a ton of leftover basmati rice from dinner the night before. Ten minutes later, the rice was fried, tasty, and ready for dinner. How great is that? This recipe is crazy easy and very adaptable. Want to up the protein? Add another egg or leftover chicken or beef (I love little bits of rotisserie chicken for this dish). Need more veggies, like broccoli or carrots? Just add them in at the beginning with the peas.  This has always been a favorite with the kids that come to my cooking camps too. They love helping with the stirring, and particularly scrambling the eggs. Give it a try and watch your kids dig in!


Fried Rice

Serves 4

  • 1 tablespoon sesame oil
  • 1 cup frozen peas, thawed
  • 3-4 cups leftover white or brown rice
  • 3-4 tablespoons soy sauce
  • 2 eggs
  • 2 green onions, sliced

Heat a large non-stick skillet over medium heat. Add sesame oil and raise heat to medium-high. Add peas (and other veggies or meat if you’re using them) to the pan and cook for 2 minutes, or until heated through, stirring occasionally.

Add rice to pan, then pour soy sauce on top and stir well, cooking for 2-3 minutes, or until rice is heated through and soy sauce is evenly distributed. Push rice to the edges of the pan, forming a well in the center. Crack the eggs into the well and scramble until just cooked, then stir in with the rice. Remove from heat; stir in the green onions. Taste and season with a pinch of salt if necessary.
