Easy Family Recipes: Gluten-Free Quinoa-Pecan Salad

flexed quinoa with pecansLately, I’ve had a minor obsession with quinoa (pronounced keen-wa). It’s a teeny-tiny grain that originally hails from South America. This gluten-free, high-protein wonder makes wonderful side dishes and salads that are simply delicious. Before you get too concerned that quinoa is stereotypical “health food”, don’t panic. The stuff is super tasty, if you just know how to work with it a bit.

You can pick-up quinoa in your local grocery store, typically where you’ll find the rices. Here’s a tip though: Even if the box says that the quinoa is pre-rinsed, don’t believe them. Make sure you rinse your quinoa really, really well before you use it. Quinoa has a bitter coating that can change the flavor of your dish, and convince you that it’s no good. Au contraire! Just give it a good rinse in a colander and you’ll be good to go.

Give this simple side dish a try, and heck, maybe you’ll even want to include it on your Thanksgiving table!

Georgia Pecan Confetti Quinoa

Yield: 6 half-cup servings

  • 2 teaspoons olive oil
  • 1/2 cup diced carrots
  • 1/2 cup diced zucchini
  • 1/2 cup diced yellow squash
  • 1 garlic clove, minced
  • 2 cups cooked quinoa, rinsed before cooking (prepared to package directions)
  • 1/4 teaspoon finely chopped rosemary leaves
  • 1/4 cup toasted Georgia Pecan halves (reserve 2 tablespoons for garnish)

Heat oil in large skillet and add carrots, zucchini, yellow squash and garlic. Cook until crisp tender.

Fold in cooked quinoa, rosemary and pecans. Season to taste with freshly ground black pepper and sea salt.

Present quinoa on a large platter and garnish with additional toasted pecans.
