Easy Family Recipes: Green Bean Stir Fry

Green Bean Stir FryThis week I’m all about quick, quick, quick, and not so worried about getting fancy dinners on the table. I’ve recently become a convert to the stir fry world, using a cheap wok that I purchased at Ikea ($5!) to whip up dinners in about 20 minutes, start to finish. I keep a variety of sauces and Asian condiments in the fridge and usually throw in whatever looks good to me at that moment, but have no problem at all keeping it super simple with some soy sauce and honey as my flavoring/sauce mixture. This veggie stir fry is easy to make and good for your family too, using crisp green beans, bell peppers, and zucchini. Make the most of the last remains of your garden while you can, and whip this up tonight.


Green Bean Stir-Fry

Yield: 4 servings

  • 1 tablespoon vegetable or canola oil
  • 3 cups fresh green beans, ends trimmed
  • 2 cups sweet bell peppers, sliced
  • 2 cups zucchini, thinly sliced
  • 1 cup carrot, thinly sliced (you can also use the already shredded/julienned carrots from the grocery store-love these!)
  • 2 tablespoons honey
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon black or white sesame seeds

Preheat large sauté pan or wok over medium-high heat. Add vegetable oil to preheated pan. Carefully add all vegetables to preheated pan. Cook vegetables for 4 to 7 minutes or until desired doneness, stirring briskly. Add honey and soy sauce to pan and stir to combine. Serve stir-fry with rice and garnish with sesame seeds.

If you’d like to add a bit of protein to your dish, add one or two diced chicken breasts in with your veggies.
