Easy Family Recipes: Grilled Salmon Teriyaki

You wouldn’t believe how many kids walk through the doors at my cooking school and profess their deep and abiding love for salmon. It’s always so funny thinking that kids could really enjoy fish, especially salmon, but they do. This dish is appealing to all ages because it adds a little sweetness through the pineapple juice in the homemade teriyaki sauce. The heat from the grill will amp up the flavor by slightly caramelizing the sugars in the juice. Once you whip up your teriyaki sauce though, be sure to reserve half immediately for later use. You will want to discard the marinade used on the raw fish to keep things safe and relatively germ-free for your family.

Grilled Salmon Teriyaki

Yield: 4 servings
Prep time: 25 minutes
Cook time: 10 minutes

  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 3 tablespoons Mazola Corn Oil
  • 1 tablespoon ground ginger
  • 1 tablespoon minced garlic
  • 1 1/2 pounds (4 pieces) fresh salmon fillets

  1. Combine soy sauce, pineapple juice, oil, ginger and garlic in shallow dish. Reserve 1/2 cup for later use. Add salmon, turning to coat; cover and let stand 15 minutes.

  2. Remove salmon from marinade and discard any remaining marinade. Grill over medium heat, turning once, about 5 minutes on each side, until salmon flakes easily with fork.

  3. While salmon is cooking, transfer reserved 1/2 cup marinade to small saucepan. Bring to boil over medium-high heat; boil until reduced by half.

  4. Serve salmon fillets drizzled with reduced marinade.
