It seems that every kid I meet likes chicken tenders. Adults, maybe not as much. But these crunchy, tasty tenders will please your entire family. I’ve been using crushed pretzels instead of bread crumbs lately as a coating for chicken and am loving the results. These include heart-healthy almonds in the coating mix, and a bit of Dijon for additional flavor. If the kids aren’t huge Dijon fans, skip it. Just be sure to really pulverize the nuts and pretzels so that they’ll stick to the chicken more easily. You can use a food processor, or if you want to get the kids involved, place the pretzels and nuts into a resealable bag, remove as much air as possible, and lightly pound with a rolling pin. They’ll have a blast!
Honey Dijon Pretzel Chicken Tenders
- 1-1 1/2 pounds chicken tenderloins
- 1 egg, whisked
- 1 tablespoon Dijon mustard (can decrease or eliminate if you like)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup finely crushed pretzels
- 1 cup finely crushed Blue Diamond Honey Dijon Almonds
- non-stick cooking spray
In a medium bowl, whisk together egg, Dijon, garlic powder, salt, and pepper. Place chicken in bowl and place in refrigerator to marinate for 20 minutes.
Preheat oven to 375-degrees F.
Combine pretzels and almonds, and spread on large plate in even layer. Coat each chicken tender in pretzel-almond mixture, then place on greased baking sheet. Lightly spray with cooking spray. Bake for 20 minutes, or until chicken is cooked through.
