Easy Family Recipes: Key Lime Parfait

key lime parfaitEvery Christmas, we get a little Key lime pie crazy. A friend makes terrific pies, and I always snag one or two from her to celebrate the holiday. But this weekend, I was monkeying around trying to come up with a new, simple version of the classic, without having to make a huge pie. Enter the Key lime parfait. You can whip up a bunch of these little beauties with very little effort…I promise. Just look for small shot-style glasses or plastic cups at your grocery store, then start layering. I know that I’ll be making another batch of these to celebrate the holiday with my family later this week. Give them a try!


Key Lime Parfaits

Makes 12 mini parfaits

  • 6 tablespoons graham cracker crumbs
  • 1-12 ounce jar key lime curd (available in the baking aisle)
  • 2 cups whipped cream, either prepared or homemade
  • 1 lime slice, cut into tiny wedges

Place 1 teaspoon graham cracker crumbs in the bottom of each glass (I used small dessert-sized shot glasses found at the grocery store). Place key lime curd into a resealable bag, then cut a tiny bit of the corner from the bag for piping. Do the same with the whipped cream.

Pipe a small amount of key lime curd into each glass, on top of the graham cracker crumbs. Pipe an equal amount of whipped cream on top of the lime curd, then repeat the layers, starting again with the graham cracker crumbs. Top with a tiny lime wedge. Refrigerate for 30 minutes, or until ready to serve.

Note: Key lime not your thing? Look for other types of fruit curd, such as lemon, banana, or strawberry-rhubarb. Feel free to mix and match!
