Easy Family Recipes: Lemon-Roasted Asparagus

asparagusOur lackluster winter has me already craving spring, and with it, gorgeous spring veggies, like fresh asparagus.

Now I know that asparagus isn’t the easiest vegetable to get kids to eat, but this version has great flavor and is a bit, less asparagus-y. It’s super simple to prepare, utterly delicious, and makes a great side dish. Give it a try.

Lemon-Roasted Asparagus

Serves 4-6

  • 1 bunch asparagus, bottom 1-inch trimmed
  • 1 lemon, zest only (reserve lemon for jusice to use in another recipe)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Preheat your oven to 450-degrees.

Place the asparagus on a rimmed baking sheet. Drizzle the olive oil over the spears, and then sprinkle with the lemon zest, salt, and pepper. Toss on the baking sheet to combine. Roast in the oven for 15 minutes.

Leftover Lemon-Roasted Asparagus is wonderful in salad the next day. Just cut into 1-inch pieces and toss with your salad.
