Easy Family Recipes: Lemony Peas and Pasta Salad

Lemony Peas and Pasta SaladSpring veggies are the first sign that lighter, fresher meals are about to become family dinner staples once again. This quick and very simple pasta salad will be a big hit for your entire family. Not only does it use a fiber-rich pasta, but it includes gorgeous spring vegetables in a way that your kids will enjoy, including sweet sugar snap peas and green peas. By tossing in the veggies into the pasta pot during the last few minutes of cooking, you save yourself time and clean-up. While the pasta cooks, make a simple vinaigrette using lemon juice, zest, and good-quality olive oil. Your pasta will soak in the goodness, lending lots of flavor to your dish. Want to make it a complete meal? Just shred and add two chicken breasts from a grocery store rotisserie chicken. Even your meat-lovers will be satisfied!

Lemony Peas & Pasta Salad

Prep time: 20 minutes
Cook time: 10 minutes
Servings: 6-8

  • 1 box Dreamfields Penne Rigate
  • 2 cups sugar snap peas
  • 2 cups fresh or frozen green peas
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest, plus extra for garnish if desired
  • 1/2 teaspoon salt
  • 6 tablespoons olive oil
  • 4 cups baby greens, chopped (arugula, spinach or blend)
  • 1/4 cup chopped fresh herbs, such as Italian parsely, mint, or chives (optional)
  • Parmesan cheese, shaved

Cook pasta according to package directions, adding sugar snap and green peas during last 3 minutes of cooking; drain. Rinse with cold water; drain again. Place in large bowl.

Meanwhile, combine lemon juice, zest and salt in small bowl. Whisk in oil. Toss with pasta and peas. Gently toss in greens and herbs, if using. Garnish with shaved Parmesan and additional zest, if desired.
