If you’re looking for the fastest, healthy-but-still-tasty after-school snack, this is it. By making a yummy spread to act as the glue for the whole shebang, you can have this snack ready when the kids walk in the door. Even better, if you’re cool with your offspring using the toaster, they can make it themselves! Consider making a larger batch of the flavored cream cheese to store in the fridge for the week. It will keep easily for at least that long, and can be doubled, tripled, quadrupled or more. Be judicious with the vanilla extract though, as even a single drop can pack quite the wallop when you’re mixing small amounts. It’s easy to overpower the spread if you use too much.
Peaches and Cream Waffle Bites
- 1 whole-wheat frozen waffle
- 2 tablespoons reduced-fat whipped cream cheese
- 1/8 teaspoon ground cinnamon
- 1 drop vanilla extract
- 1/2 cup Dole Jarred Sliced Peaches, drained well and diced
- 2 teaspoons chopped walnuts, toasted
Toast frozen whole-wheat waffle and cut into quarters.
In small bowl, combine cream cheese, cinnamon, and vanilla. Spread over waffle bites.
Top each bite with peaches and sprinkle with walnuts.
