These delicious and slightly unusual tacos take a few family favorites and combine them into one super-fab, very easy dish that can be prepared with little effort. I work furiously all summer long teaching kids and teens to cook, and lots of times, my family will enjoy leftovers from that day’s camp for our dinner. Some nights though, when I’m just over the whole thing, I want my family to pitch in and make my night a little easier. These tacos do the trick. If the family doesn’t have the time, energy, or skill to make the pulled pork from scratch, no biggie either. Good-quality prepared pork is readily available and helps these tacos to get on the table…fast! The apples in the slaw give them a bit of yummy sweetness that works beautifully in the dish too.
BBQ Pulled-Pork Tacos

Servings: 4
- 2 pounds (1/2 tray) Byron’s Fully Cooked Pulled Pork BBQ
- 1 cup mayonnaise
- 1/4 cup red wine vinegar
- 2 tablespoons sugar
- 1 package (12 ounces) coleslaw mix
- 2 Granny Smith apples, washed and grated
- 8 six-inch corn tortillas
- Chopped cilantro for garnish (optional)
Heat pork BBQ according to package directions and keep warm. Preheat oven to 350 degrees F. Line baking sheet with parchment paper and set aside.
In small mixing bowl, whisk together mayonnaise, vinegar and sugar. Set aside.
In medium mixing bowl, toss together coleslaw mix and grated apples. Stir in mayonnaise mixture and toss to coat.
Place corn tortillas on prepared baking sheet and bake one minute or so until edges begin to get crispy, but tortillas are still pliable.
To serve, divide warm BBQ evenly among tortillas and top with apple-slaw mixture. Garnish with cilantro, if desired.
