Easy Family Recipes: Gluten-Free Pumpkin Mousse

Pumpkin MousseReady for the easiest fall dessert…ever? Just a couple of ingredients and you can whip up this tasty gluten-free pumpkin mousse in a jiffy. Even the kids can help with this one.

If you have a little extra time, hold a whipped cream contest and let the kids compete to see who can whip the cream the fastest. It can be a bit messy, but the kids have a great time with it, especially when you hold the bowl of whipped cream upside down over their heads to be sure it’s actually whipped. (Hint: Make sure it actually is!) The kids in my cooking classes go crazy when I say “whipped cream contest,” and yours will too.


Pumpkin Mousse

Serves 6 (generous portions)

  • 2 cups canned pumpkin
  • 1 1/2 teaspoon pumpkin pie spice
  • 2 1/2 cups heavy cream (divided use)
  • 1/2 cup confectioners sugar
  • 1 1/2 teaspoons vanilla extract

Place pumpkin, pumpkin pie spice, and 1/2 cup of heavy cream in a medium saucepan. Stir to combine and warm over medium heat for 5 minutes. Remove from pan and set aside to cool.

Combine remaining 2 cups of heavy cream, confectioners sugar, and vanilla extract in a large bowl and whip until firm peaks form. Add 1/2 cup of cooled pumpkin mixture to whipped cream and stir to combine. Add remaining whipped cream and fold to combine until no streaks remain. Divide into individual ramekins or place in a large serving dish. Refrigerate until ready to serve.
