Popcorn is all the rage right now, whether sweet, savory, or wrapped into unexpected dishes (popcorn-flavored ice cream anyone?). I’m digging these fun popcorn-pretzel stick snacks that you can make with the kids in just a few minutes. You can pop your popcorn in the microwave, but it’s also crazy fun for the kids if you pop it on top of the stove, especially if you have a large pot with a glass lid. Just be sure to lightly the coat the bottom of the pot with vegetable oil, use a medium heat, and give the pot an occasional shake to keep the kernels on the bottom from burning. This recipe easily doubles.
Sweet ‘N Salty Popcorn Pretzel Sticks
Yield: 6 sticks
- 6 tablespoons peanut butter
- 6 large pretzel rods
- 3 cups popped popcorn
- 3/4 cup chocolate, butterscotch, or peanut butter chips (optional)
Spread 1 tablespoon of peanut butter over each pretzel, leaving a two-inch “handle” without peanut butter.
Press and roll popcorn onto peanut butter to coat. Sprinkle with sugar sprinkles.
For optional chocolate, butterscotch, or peanut butter drizzle, place chips in small sealable plastic bag and seal. Microwave in 30 second increments or until melted. Clip small corner from bag and squeeze to drizzle over popcorn.
Sprinkle with additional sprinkles. Allow melted chips to harden before serving.
