Here’s a fun, do-it-yourself lunch that the kids will love. Just whip up a quick and tasty Waldorf chicken salad using leftover cooked chicken, apples, celery, and walnuts, then pack it in a small container with washed Boston lettuce leaves on the side for the kiddos to use to wrap the salad for a riff on a classic chicken salad sandwich. Kids will love the sweetness from the apple and the crunch of celery; you’ll love just how easy it is to pull together. It’s fun and gives your child a break from the sandwich doldrums that set in. Be sure to use Boston lettuce as it forms the perfect little cup for wrapping salads.
Waldorf Chicken Salad in Lettuce Cups
Serves: 2
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 1 teaspoon rice wine vinegar
- 1/4 teaspoon dry mustard
- 1 teaspoon dried thyme
- pinch of salt
- freshly ground black pepper
- 2 cups cooked, skinless chicken breast, coarsely chopped
- 1 rib of celery, diced
- 1/4 English cucumber, diced
- 1/4 Gala apple, washed, peeled and diced
- 1/2 cup toasted, chopped walnuts
- 4 large Boston lettuce leaves, rinsed and patted dry
Directions

In medium mixing bowl, whisk together yogurt, mayonnaise, vinegar, mustard, thyme, salt and pepper.

Fold in chicken, celery, cucumber, apple and walnuts.

Place 2 lettuce leaves on each plate and spoon 1/4 of chicken salad into each cup. Serve.
