It’s a million degrees outside, or maybe it just feels that way, but no matter what, you are going to want something cold and delicious to serve on the 4th. We already know that watermelons and strawberries are in season and at their prime, and so good-for-you too. Whip up a quick smoothie and you’ll only need a few hours in the freezer until your friends and family are clamoring for delicious Watermelon-Strawberry Smoothie Pops. You’ll need to make them ahead, making party day just that much easier on you. Enjoy your 4th of July!
Watermelon-Strawberry Smoothie Pops
Makes 6 (easily doubles)
- 1 container (8 oz.) lemon non-fat yogurt
- 2 cups cubed, seeded watermelon
- 1 pint fresh strawberries, rinsed and hulled
- 1 medium banana, peeled and sliced
- small paper cups
- Popsicle sticks
Place all ingredients into a blender and process until smooth and frothy. Pour prepared smoothie into paper cups. Freeze, inserting Popsicle sticks when partially frozen. Set and enjoy.
