From thick soup to macaroni and cheese to casseroles, comfort food provides warmth from the harshness of the outdoors or just remind us the positive feelings of childhood. With its layered goodness of marinara sauce, creamy spinach and cheese between broad noodles, the following lasagna dish certainly qualifies as “comfort food.” It takes just a few ingredients and, before you know it, this appetizing slow cooker meal is ready to serve with very little effort.

Slow-cooker lasagne recipe

What you need:

2 10-ounce boxes of chopped frozen spinach, thawed and squeezed to remove moisture
1 cup ricotta (I used part skim)
3/4 cup grated Parmesan cheese
3 cups marinara sauce
6 regular lasagna noodles
1½ cups grated mozzarella cheese

How to prepare:

1. Mix spinach, ricotta, and 1/2 cup of the Parmesan in a bowl.
2. In another bowl, add 1/2 cup water to marinara sauce.
3. Place 1/4 cup of marinara mixture in the bottom of a Crock Pot or slow cooker and top with two noodles, breaking in three or four pieces to fit.
4. Layer 3/4 cup of the sauce, half of the spinach mixture, and 1/2 cup of mozzarella. Add two broken noodles and repeat layering process.
5. Finally, top with remaining noodles, marinara, mozzarella and Parmesan.
6. Cover and cook on low for 3½ to 4 hours.
