Burrito-friendly Cilantro-Lime Rice

Cilantro lime riceThis is my version of an easy burrito-friendly rice that’s tasty and not too overpowering for kids, but still has enough flavor for adults.

Serves 4-6

1 ½ cups basmati or long grain white rice
1 teaspoon salt
1 lime, zested and juiced
1 tablespoon butter
1 good five-finger pinch of salt
2-4 tablespoons washed and minced cilantro

  1. Fill a large pot ¾ full with cold water. Bring to a boil and add 1 teaspoon salt. Add rice and stir.
  2. Cook for 13 minutes, then drain in a colander as you would pasta.
  3. Place hot, cooked rice in a bowl and add zest, butter and a pinch of salt.
  4. Add cilantro (unless you really hate it, in which case just leave it out) and stir well to combine. Taste and season with more salt and lime juice if necessary. Serve immediately.
