Easy Family Recipes: Zucchini Parmesan Rounds

Zucchini Parmesan RoundsVeggies are an important part of everyone's diet, but we all know how tricky it can be to get kids to eat the green stuff. These super tasty zucchini rounds are delicious, easy to make, and a surefire way to get green vegetables off the plate and into your kids. By coating the sliced zucchini with a mixture of Panko (Japanese bread crumbs) or regular bread crumbs and Parmesan cheese, you add a layer of flavor that kids really like. Add a small bowl of marinara sauce on the side for dipping and you're set for a healthy side dish. These are baked at a high temperature to really crisp the coating without all of the oil or mess that comes with frying. Give the coated zucchini a light spray with some non-stick cooking spray to aid in browning.

Zucchini Parmesan Rounds

  • Non-stick cooking spray
  • 2 medium zucchini (about 3/4 pound)
  • 1 tablespoon olive oil
  • 1/2 cup freshly grated Parmesan cheese (about 2 ounces)
  • 1/2 cup Panko or bread crumbs
  • 1/8 teaspoon salt
  • Freshly ground black pepper, to taste
  • Paprika, to taste
  • marinara sauce for dipping

Preheat oven to 450 degrees F. Lightly coat baking sheet with non-stick cooking spray.

Slice zucchini into 1/4-inch thick rounds, leaving green skin on. Place rounds in resealable plastic bag with olive oil; shake to coat all sides.

Combine Parmesan cheese, Panko or bread crumbs, salt, pepper and paprika in small bowl.

Press each zucchini round into Parmesan mixture, coating on both sides. Place in single layer on prepared baking sheet. Spray lightly with cooking spray.

Bake until browned and crisp, about 10 minutes. Remove with spatula. Serve warm with marinara sauce for dipping.
