Easy Family Recipes: Barbecue Chicken Nachos

Barbaque Chicken NachosMy family always celebrated New Year's Eve with a smorgasbord of appetizers and nibbles. We would graze all night long, noshing on snacks with no real dinner in sight. It was glorious! It's fun to try a wide range of small bites at a party, and even if your party this year is celebrating New Year's in the Azores (they're 4 hours ahead of us, so you can celebrate New Years at 8pm) with just you and the kids, make a little buffet of all of their favorites and graze away. These barbecue chicken nachos come together in just a minute or two and have all of the kids favorites in one deliciously crunchy dish.

Barbecue Chicken Nachos

  • 1 rotisserie chicken
  • 1 cup barbecue sauce
  • tortilla chips
  • 1 to 2 cups shredded Jarlsberg Cheese
  • 1/4 cup chopped green onion
  • sour cream (optional)

Heat oven to 350 F.

Pull the meat off rotisserie chicken and place in mixing bowl. Add barbecue sauce to pulled chicken and gently mix together.

Scatter tortilla chips on oven-safe dish and place pulled chicken on top. Shred cheese with grater and coat top of chicken. Place in oven for 10 minutes or until cheese is melty. Sprinkle green onion on top and serve with sour cream, if desired.
