Beef Burritos with Pepper JackIt's time to up your taco night game with easy and healthy homemade burritos! With this recipe, you can easily have dinner on the table in fewer than 20 minutes. A little multi-tasking, like cooking the rice while sauteing the ground beef, gets things done fast. Get the kids involved in wrapping and rolling their own burritos filled with a mixture of zesty ground beef, rice, black beans, and cheese. Feel free to add any extras that your kids may love, such as sliced avocado, shredded lettuce, or even a touch of sour cream. Ole!

Beef Burritos with Pepper Jack Cheese and Black Beans

Servings: 4
Total time: 10 minutes

  • 1/2 pound ground beef sirloin
  • 1 small onion, minced
  • 2 teaspoons minced garlic
  • 1 cup chunky salsa, divided
  • 2 cups cooked brown or white rice
  • 4 whole wheat flour tortillas (9 inches)
  • 1 can (15 ounces) black beans, drained and rinsed, divided
  • 1 can (11 ounces) corn kernels, drained, divided
  • 2 cups shredded pepper jack cheese, divided
  • sliced green onion, including green tops

In medium nonstick skillet, brown ground beef, onion, and garlic over medium heat, breaking beef mixture into smaller chunks with spoon. Drain fat and stir in 1/2 cup salsa; set aside.

Spread 1/2 cup rice in center of tortilla, leaving a 1/2-inch border. Scatter about 2 tablespoons of beans and 11/2 tablespoons corn over rice. Spread 1/2 cup beef mixture and 1/4 cup cheese over corn. Top with 2 teaspoons salsa and a few pieces of green onion.

Fold in two opposite edges of tortilla 1 inch each and roll up. Place, seam side down, on microwave-safe dish.

Repeat with remaining tortillas. Place burritos in microwave and heat 1 minute, or until heated through. Serve with remaining salsa.
