Easy Family Recipes: Cheesy Bacon Quiche

Cheesy Bacon QuicheEggs are a fantastic mealtime go-to ingredient. In a sandwich, scrambled, in an omelette, or my favorite...in a quiche! Add a salad or some carrots with ranch dressing on the side and you've got a complete meal.

This quiche is loaded with bacon, but if you're feeling it, add some shredded carrots or zucchini, asparagus, or whatever veggies your family enjoys. You can even leave the bacon out completely if you're vegetarian or trying to avoid it. Using a pre-made crust makes this a weeknight dinner win too! This week, embrace your inner egg lover and give this quiche a try!

Cheesy Bacon Quiche

Serves 4-6

  • 1 pre-made pie crust
  • 1/2 pound bacon, diced
  • 1 leek, sliced and rinsed
  • 4 eggs
  • 1/2 cup Jarlsberg Cheese, plus additional for topping, grated
  • 2 tablespoons fresh parsley, minced
  • 3/4 cup whole milk or cream

Heat oven to 400 F.

Pre-bake pie crust for 10 minutes, then remove from oven and set aside.

While crust pre-bakes, saute bacon in a medium saute pan, then, just before it become crisp, add leek and cook until tender.

In bowl, whisk eggs and milk or cream together and add grated cheese, parsley, bacon and leek. Pour filling into crust and top with remaining grated cheese. Bake for 30-35 minutes, or until edge is golden brown and center is set.
