Easy Family Recipes: Orzo Pasta with Brie

Orzo with BrieLooking for a side dish that's a little more grown-up, but still super easy to prepare? This creamy orzo pasta has a lovely, fresh flavor from a bit of olive oil and lemon (juice and zest!), balanced with the creaminess of brie. You can pull it together in 15 minutes and make everyone think you slaved away. Mix it up a little by changing out the nuts from pricey pine nuts to toasted walnuts, or by using minced fresh parsley instead of fresh basil. Cut the rind from the brie to encourage melting. To make a main dish, add cubed or shredded chicken from a rotisserie chicken. Enjoy!

Orzo Pasta with Brie

Serves: 8

  • 1 pound orzo pasta
  • 1/4 cup extra-virgin olive oil, plus 1 tablespoon, divided
  • 1 tablespoon lemon zest
  • 3 tablespoons lemon juice
  • 1/2 teaspoon minced garlic
  • 1 wheel (10 ounces) Brie cheese, cut into 1/2-inch cubes
  • 3/4 cup golden raisins
  • 1/2 cup toasted pine nuts
  • 1/4 cup fresh basil, chiffonade (cut into thin strips)
  • salt, to taste
  • freshly ground black pepper, to taste

Prepare pasta according to package instructions until al dente. Toss with 1 tablespoon olive oil to prevent sticking and allow to cool.

In large bowl, toss pasta with remaining olive oil, lemon zest, lemon juice, garlic, Brie cubes, raisins, pine nuts and basil. Season with salt and freshly ground black pepper, to taste. Garnish with additional basil, if desired.
