1 package instant yeast
1 cup warm water
1 teaspoon sugar
2 tablespoons olive oil
1/2 teaspoon salt
for 1 pizza
1 cup cooked turkey
1 cup diced plum or fire roasted diced or sundried tomatoes
1/2 cup crumbled crisp bacon or sauteed diced pancetta or saut饤 crumbled/sliced sausage
1 cup chopped fresh spinach
8 ounces shredded mozzarella
Preheat oven to 450 degrees
Combine yeast with warm water and sugar.
Mix well and let sit for 5 minutes.
Add flour, sugar, salt and oil. Mix with a wooden spoon or your hand until well blended.
Knead for 5-7 minutes on a well floured surface.
Place into an oiled bowl and cover with plastic wrap.
Let rise for 30 minutes.
Divide the dough in half and form into two balls. If you are only making one pizza, you can freeze one of the balls.
Roll out the dough into a 9 x 12 rectangle (approx. size). Sprinkle corn meal on a lightly oiled baking sheet or baking sheet lined with parchment paper or on a pizza stone.
Brush the dough with olive oil.
Top the dough with turkey, bacon, tomatoes, spinach and mozzarella.
Bake 10-12 minutes until the cheese is melted. Slice and serve.
