What’s For Snack? Fruit Pizza!

If you’ve been looking forward to the arrival of spring, you’ll appreciate the spring flavors in this colorful fruit pizza. Made with a gluten-free almond flour crust, this fruit pizza is the epitome of a family snack, perfect for toddlers and kids. Let them frost the crust after baking and choose the fruit toppings to decorate. You’ll have a healthy snack ready in under 20 minutes! Full of protein, fiber and healthy fats, it’s a great option for the whole family.

Ingredients

Oatmeal Crust
• 1½ cups oats
• 1 cup almond flour
• 2 tablespoons maple syrup
• 1 egg
• 3 tablespoons butter, melted
• ¼ teaspoon baking soda
• ¼ teaspoon sea salt
• 1 teaspoon vanilla extract

Greek Yogurt Frosting
• ½ cup plain Greek yogurt
• ¼ cup chocolate peanut butter powder

Toppings
• ½ cup blueberries
• 1 cup sliced strawberries
• 1 small kiwi, sliced

Instructions

1. Mix oats, almond flour, maple syrup, egg, butter, baking soda, sea salt and vanilla extract in a medium bowl. I recommend a hand mixer to mix well.
2. Once mixed, shape the dough into a ball with your hands. You will need to cup it tightly so it holds, and then spread on pizza pan. (A 12-inch pan works best.)
3. Bake at 375° F for 10 to 12 minutes, or until crust hardens.
4. Let crust cool for 20 minutes. While crust is cooling, mix your chocolate peanut butter glaze.
5. Top the crust with glaze and optional fruit toppings.
